Stuffed Bell Peppers
1 lb Ground beef
1 medium onion, chopped
2 tbsp olive oil plus more for pan
3 cloves of garlic, minced
1 tsp garlic powder
2 tsp onion powder
1 tsp smoked paprika
1 tsp cumin
1 tsp chili flakes (optional)
1 cup Cooked rice
1 large tomato, chopped
2 tbsp tomato paste
4 bell peppers, tops and seeds removed
1/2 cup shredded Wiebe Farmhouse Chipotle Cheese
Heat a large skillet over medium heat with 2 tbsp olive oil. Once the oil is hot add the ground beef, onion, spices, salt and pepper.
Meanwhile, heat a large pot of salted water until boiling. Add the bell peppers (tops removed) and boil for 3 minutes until slightly softened. Remove and casino online let cool.
Stir the ground beef until almost done (browned), then add chopped tomato, garlic and tomato paste. Mix together until the beef is cooked through. Remove from heat and mix in cooked rice with ¼ cup grated chipotle cheese.
Preheat your oven to 350 degrees F. Grease a baking dish. Stuff each pepper with the ground beef mixture and place in the baking dish. Bake for 18 minutes, top with shredded cheese, and then bake until the cheese is bubbling and melted.
