Roasted broccoli is a great side dish and it is a better version of broccoli when compared to the standard steamed version. It is bursting with bright flavors. It is nice enough to serve to a crowd but easy enough for a weeknight dinner- what else could you want?!
2 heads of broccoli, cut into florets
2-3 tbsp olive oil
1 garlic clove, minced
Salt and pepper
1/4 cup parmesan cheese
1 lemon wedge (1/4 lemon)
Preheat oven to 400 degrees F. Mix broccoli florets with olive oil and minced garlic to coat and lay out in one even layer on a baking sheet. Sprinkle generously with salt and pepper. Bake for 15-20 minutes until lightly golden brown, removing once to flip the broccoli.
Once the broccoli is done, scoop it into a bowl and mix with cheese and a spritz of lemon juice. Serve immediately.
