2 overflowing cups fresh basil
1/2 cup extra virgin olive oil, plus extra for the top of the jar
2 garlic cloves
1/4 cup pine nuts or walnuts or pistachios
Salt and pepper
Your favorite pasta
Using a food processor, combine the fresh basil, nuts and garlic cloves until they are finely chopped. Running the food processor, stream in the oil slowly until the pesto is completely smooth. Add salt and pepper to taste and transfer to a clean and sterile jar. Top with 1-2 tbsp olive oil to preserve the freshness.
Cook your favorite pasta according to package directions. Drain and dress with 1 tbsp extra virgin olive oil. Add pesto to coat and top with parmesan cheese. Enjoy!
