Honey Balsamic Roasted Beets
Beets are sweet, earthy and delicious. This recipe perfectly compliments all of those flavors, and would be a great side dish to a honey-glazed pork or chicken breast.
10 Small Red Beets or 5-7 large ones (about 2 lbs)
½ cup Balsamic Vinegar
½ cup Olive Oil
¼ cup plus 2 tbsp Local Honey
Preheat oven to 400 degrees. Cut beets into eighths and place in a baking dish. Whisk together sauce ingredients and pour over top of the beets. Mix to combine. Cover pan with foil and roast for 25 minutes. Remove foil and roast for 20-30 more minutes, until beets are fork tender. Enjoy!
