Garlic and Rosemary Grilled Potatoes
Many meals call for simple side dishes that can be prepared without much of a thought, and this is one of those recipes. These garlic and rosemary potatoes are so simple to make, and they can be roasted on the grill or in the oven. All you have to do is chop everything, wrap it in foil, and set a timer! 12 Small New Potatoes (about 3 lbs)
2 Tbsp Rosemary
6 Garlic Cloves
2 Tbsp Olive Oil
2 Tbsp Butter
2 Tsp Salt, plus more to taste
Lay out one large rectangle of tin foil. Cut potatoes in quarters, and then in eighths and place them in the foil. Roughly chop the garlic and mince the rosemary and add to the potatoes. Cut up 2 tbsp of butter and place in with the potatoes along with 2 tbsp of olive oil. Mix together with your hands and try to resist licking your fingers!
Wrap the potatoes in the tin foil and place on a hot grill. Reduce heat to medium-low, cover, and let roast for 25 minutes. Using tongs, gently flip the foil pouch and roast for another 25 minutes. Once the potatoes are fork tender, rip open the foil (careful of hot steam!) and dump potatoes into a bowl. Add salt and a small pat of butter, if needed (or desired) and serve.
